El Borrego has grown from a small local operation to a large restaurant, a catering service, and may soon be at your local grocer. They continue to grow and offer healthy options for the community from barbacoa to birra, beef, or goat stew to homemade pozole, quesadillas, and pancita. El Borrego has been in business for nearly 15 years and has been featured in the San Diego Reader, City Beat, and Union Tribune and on NBC and ABC. El Borrego is located at 4280 El Cajon Blvd, San Diego, CA 92105. They offer on-site dining and catering.
SCORE mentor, Elias Sheinberg helped Rodnia Navarro and her mother, Rosario Sotelo create a formal business plan to start their business as an authentic Mexican restaurant. He assisted them in finding the right immigration lawyer, real estate lawyer, business accountant, business bank account, and even their restaurant location. Mr. Sheinberg's contacts with a remodeling business helped Ms. Navarro remodel the restaurant located at a very low cost. Mr. Sheinberg gave advice along the way and assisted the business during the recession.
El Borrego started in a driveway with one customer but quickly grew with people traveling hours for the "El Borrego", which translates to the lamb. They started with a quarter of a pound of meat and in just 3 months they were going through 600 pounds of meat in one weekend. Soon, they needed a restaurant and went to SCORE to help them get started.
