Most of career was spent as a college food service director on large campuses involving a wide variety of food services such as snack bars, cafeterias, dining rooms, catering, athletic concessions, fast food restaurants, faculty clubs, etc. Also experienced in other institutional food service settings: hospitals, prisons, schools, etc. Managed operations. Responsible for financial success and operating restaurants to compete with nearby commercial enterprises. Have been a small business owner for about 15 years and a SCORE counselor over 15 years.
Special skills include writing and editing business plans, menu planning,, the design and layout of food service facilities, writing operating policies and procedures, etc.
